How to Make Tea

Many of the teas from Preston's - Purveyors of Fine Tea - come from some of the oldest plantations in the world. Much of the harvesting, fermenting and general preparation is still done by hand. Consequently they are extremely high grade and a delight to drink.

Black teas -to make the best cup of tea, boil the water and let rest for a couple of minutes before adding to cup or teapot. Use 1 good teaspoon of leaf per person.

In the case of green tea, infuse for 2-3 minutes and then remove the leaf from water. This will help prevent the tea from becoming bitter and should allow you to get more than one infusion per serve.

White teas have a very subtle flavour and should be infused for 4-5 minutes to draw it out.

A tisane is anything that does not come from the Camellia sinensis (the tea bush), in other words, the herbals and such like. Because many tisanes tend to be quite strong in flavour, you might like to start with 1/2 teaspoon per person.

If you require a sweetener in your tea, try using a small dollop of honey instead of sugar. Can be very nice in green tea.
